For week 4 of the Roast! West Coast podcast I welcome Inbal Kalin to the show. She is the Cofounder & Head Roaster of Stache Coffee Co. in Oceanside, California. Stache Coffee Co. is a Veteran-Owned and family operated roastery that was established in 2014, and specializes in sourcing sustainably grown coffees from all over the world which they roast in small batches. Like really small. Like you place the order for two pounds and they roast two pounds.
Stache is a bit of an under the radar gem in North County San Diego, in part because their own cafe plans have been delayed by the coronavirus pandemic. If you didn’t know them from a farmers market or through one of the restaurants serving their coffee you may not have heard of them.
Inbal and her husband Louis have a farm-to-cup attitude towards their business, and through Direct-Trade source beans from micro-lot farmers worldwide ensuring that family farms are adequately paid for their efforts.

Direct trade: a term that relates to an agreement between a farmer or producer and a coffee roaster. This arrangement cuts out brokers. Those in favor of direct trade argue that it gives farmers more power and control at the same time as enhancing the quality and making prices more competitive.
Micro-lot: a micro-lot is a single farm or a specific part of a farm or plantation that is famed for producing the best beans.
