This week I ask Chris O’Brien, founder of Coffee Cycle & my own personal coffee cognoscenti about what it means when a coffee is light, medium or dark. We also explore when we should drink our coffee to get the best flavor out of the bean, and then how we might keep our coffee fresh. Is it really okay to leave your coffee in the back of the freezer for a year? Does oxygen impact the flavor.

Acidity: A characteristic of coffee acidity is the bright, pointed taste left in your mouth which also increases the overall natural sweetness of the coffee. It is tasted mainly on the tip of the tongue and can be accessed as lively, moderate, flat or dull. Along with the flavor, aroma and body it is one of the main characteristics used by coffee tastors in the sensory evaluation of coffee.
City Roast: Slightly darker roast than the American normal roast, also know as Espresso Roast
Full City Roast: When coffee is roasted long enough to bring the beans oils to the surface. A darker roast than the American normal roast with some oil patches, also known as French Roast
