This week I ask Chris O’Brien, founder of Coffee Cycle & my own personal coffee sensei about how coffee is processed right at the source, the farm, before it is shipped to your favorite local roaster. He’ll break down the differences between natural, washed and honey processing to give us a better appreciation for the transformation a coffee bean goes through as it travels from the coffee cherry to green bean to the roaster and finally into our cup of coffee.

COFFEE VOCABULARY:

First crack: the first crack is a term used to describe the first stage of expansion when the coffee beans swell during the roasting process and make a sound similar to that of popcorn popping in the microwave.

Second crack: this term relates to the second stage of expansion during roasting when moisture is released, and the structure of the beans starts to alter. At this stage, much of the flavor is burned off. Think the snap, crackle and pop of a popular crisped rice cereal.
