This week I ask Chris O’Brien, founder of Coffee Cycle & my own personal coffee sensei about cupping which is a traditional form of tasting coffee.
Through taste and smell a coffee taster attempts to measure aspects of the coffee's taste, specifically the body sometimes called the texture or mouthfeel, sweetness, acidity, flavor and aftertaste. Coffee beans embody flavors specific to the region where they were grown (similar to wine). Skilled cuppers may attempt to identify the coffee's origin just from taste, and will develop the descriptions that drinkers use to identify their favorite styles.
