This is a special coffee smarter recap episode. I’m out of town acting as a guest barista at Trail Fest, a San Diego Mountain Biking Association fundraiser and campout here in Southern California. I planned on taking the week off, but while I was hosting an event last weekend, a listener said, “I wish you’d do a show about water.”
Which got me confused because I was pretty sure that I had. I came home, checked the archive, and you know what…I was right! We’ve done two water-heavy episodes on this show, including the second coffee smarter session, way back in season 1!
But we have new listeners now and a lot of content in the archives. Instead of taking the week off completely, I cut together this episode featuring conversations with Chris O’Brien of Coffee Cycle Roasting and Siri Simran Khalsa of Lofty Coffee.
In the first, with Chris, we cover basic topics like how hot water should be, what ratio of water to the coffee grinds we should use, and so on. In the second, with Siri, we go deeper into what is happening in the coffee blooming phase of brewing, which is when the water and coffee interact. Then we cover what the Specialty Coffee Association says about water for coffee.
A month ago I included the release of compostable coffee balls from CoffeeB in this NFTS section. Coffee celebrity James Hoffman just released this video reviewing the at home espresso balls and the proprietary machine that brews them.
Drink their coffees and whiskeys. Visit their cafes. Support local coffee shops. You won’t be disappointed.

Alex Pyne is the President of the Blue Bottle Independent Union (BBIU) representing the employees of some Blue Bottle Coffee locations. In this episode of Coffee People, we chat about his draw to organizing, what a union does for its members, and his version of the best cup of coffee.
Jing Lin shares her path into entrepreneurship and coffee shop ownership with Coffee People. We discuss how her career climb in the film industry wasn't getting her to the more engaged, creative mountaintop she strived to stand on, and how the Covid-19 pandemic jumpstarted her foray into business.
