SIMPLE HOW-TO: Traditional Method
20g grinds to 300g water (1:15 ratio)

An every-time disclaimer: Be sure to pour the proper ratio of water to coffee grinds. For example, if using a 1:15 ratio, 20 grams of coffee would require 300 grams of water to be brewed properly. You may prefer a different ratio, so don’t be afraid to experiment. Generally, 1:15 up to 1:18 are the preferred coffee-to-water ratios to produce enjoyable cups of coffee.

For best results, grind whole beans with a burr grinder immediately before brewing.*

1. Grind your coffee medium-fine.
2. Add a #2 cone shaped filter (fold the tabs over), and rinse with hot water. Dump the rinse water!
3. Add freshly ground coffee and shake brewer to flatten the bed of coffee grinds.
4. Add 45-60g water and let coffee bloom for 20-30 seconds.
5. Add remaining water, stir to prevent clumping of grinds (if necessary).
6. Put on dripper cap to prevent heat loss,* and let brew/steep for 2m-2m30s.**
7. Place dripper on a mug or vessel engaging the plunger and allowing coffee to drawdown 45-60 seconds.

Total brew time: 3m30s-4m.
* Up to you. I usually do because it is there.
**You’ll definitely see recipes with a shorter brew time. I like a fuller, richer cup, and based on the capabilities of my grinder, have found this to be about right for me. Don’t be afraid to experiment with the variables.

Try flipping this recipe by adding your hot water first and your coffee second. By making this change you may avoid clogging and clumping.

• Bypass Water: Water that is deflected to the outside of the filter. This minimal amount of water gets caught outside the water engaged with the coffee grinds, limiting extraction. This water can have minor impacts on your coffee, and good coffee shops will account for any bypass water in their recipe.
  
  Note: Bypass Brewing is a technique that uses this concept to its advantage—often when brewing in large batches—where running all the water directly through the grinds may extend the brew time, overflow the filter, or cause other flavor issues.
