Jonny Pops are the best popsicles ever.
Chris suggested I brew smaller cups with the Kalita Wave (12-15g of ground beans), and it has been working! I’m still not an expert but the improvements have been notable.

Coffee theory of extraction doesn’t always match up with real-world brewing results. All the various flavor extractions are happening simultaneously. All components of a brew—from start to finish—are important to the final results.
Brew your entire batch into one vessel!
Unless you want to perform a ruler test. Split your brew batch into thirds—1st, 2nd, and 3rd. Taste test each batch to see how the flavors being extracted changed during the brewing process.
